The batter relies on self-rising cornmeal mix and self-rising flour, which already carry salt and leavening; plain cornmeal or cornstarch in the same amounts will not rise the same way. Large spoonfuls brown before their centers set, and breaking open the first fritter shows whether the rest should be smaller.

    Beat the egg with the buttermilk.

    Stir in cornmeal mix, self-rising flour and grated onion until the dry ingredients are moistened.

    Rest the batter for 5 minutes.

    Meanwhile, heat about 5 cm of oil to 190°C in a deep pot; use a larger pot if that depth would exceed half its height.

    Drop tablespoon-size portions close to the oil surface without crowding.

    Fry for about 1½-2 minutes, turning to brown evenly.

    Open the first fritter to check for wet batter.

    If the center is underdone, make smaller portions and cook longer. Drain the golden fritters and continue in batches.
