There is no flour, egg or oven involved. The powdered sugar firms the center as much as it sweetens it, and cutting it back makes the balls hard to dip. Let the chocolate cool to barely warm, since a hot coating softens the chilled center and loosens it from the pick.

Mix peanut butter, butter and vanilla until smooth.
Add powdered sugar in two additions, scraping the bowl bottom thoroughly.

Roll into 24 balls of about 18 g and set on parchment.
Chill for 30 minutes, until firm enough to hold a dipping pick.

Chop chocolate and place with coconut oil in a microwave-safe bowl.
Heat at 50% power in 30-second bursts, stirring each time, until melted. Cool for 5 minutes until lukewarm.

Insert a pick into each ball and dip about three quarters into chocolate.
Let excess drip off and place on parchment. Remove all picks and gently close the small holes.

Refrigerate at least 20 minutes until the coating sets, and keep chilled.
