About this dish

Unlike traditional fudge, which crystallizes from a boiled sugar syrup, this one is just chocolate and sweetened condensed milk firming up in the fridge.

Evaporated milk or regular milk will not give the same texture. If the slab is still soft, give it more fridge time rather than stirring in flour or powdered sugar.

    Line a 15 cm square tin with parchment, leaving handles on two sides.

    Chop chocolate and butter into small pieces.

    Microwave the chocolate at 50% power in 30-second bursts, stirring after each, until nearly melted.

    Stir out small remaining pieces using residual heat.

    Mix in condensed milk and butter.

    Heat at the same power in 20-second bursts until butter melts and the mixture is smooth, stirring each time. Add vanilla and salt.

    Press into the tin and level the surface.

    Refrigerate for at least 2 hours, until firm through the center.

    Lift out using the paper and cut into a 5 by 5 grid for 25 pieces.

    Wipe the knife between cuts and refrigerate airtight.
