Rinse rice and bring it to a boil with 500 ml water.
Cover and cook on low for 15 to 18 minutes, then turn off the heat and rest covered for 10 minutes.

Finely chop onion, pepper, celery and garlic.
On a separate board, trim membranes and connective tissue from the livers and cut into 5 mm pieces. Wash hands and utensils after handling raw liver.

Heat oil in a wide skillet and cook pork over medium-high heat for 5 minutes, breaking it apart.
Add liver and cook, stirring, for another 5 minutes.

Add the chopped vegetables and garlic and cook over medium heat for 7 minutes.
Stir in paprika, thyme, cayenne, salt and pepper, then add stock and bay leaf and scrape the pan bottom.

Simmer uncovered for 7 to 10 minutes until no thin liquid pools between the meat.
Check that the meat mixture, including the liver, reaches at least 74°C.

Remove the bay leaf and fold in the rested rice.
Stir gently over medium-low heat for 3 to 5 minutes until hot throughout, without crushing the grains. Finish with chopped parsley.
