Line two trays with parchment and lightly butter two spoons.
Chop pecans coarsely and weigh the whites into a clean mixer bowl.

Dissolve sugar, corn syrup and water over low heat in a heavy saucepan of at least 2 L.
Once boiling, stop stirring and position the thermometer clear of the base.

When syrup approaches 120°C, whip the whites to stiff peaks.
Continue heating syrup to 126 to 127°C, then remove from heat.

With the mixer on medium, pour syrup in a thin stream between the bowl wall and whisk, not onto the moving whisk.
Add vanilla and beat for another 8 to 12 minutes.

When the shine dulls and a spoonful keeps a small peak, fold in pecans.
Quickly use the buttered spoons to portion about 48 candies.

Set for at least 12 hours in a cool, dry room.
Turn once when the bases are firm. Pack only when the surfaces are dry and the candies hold their shape when lifted.
