    Preheat to 180°C.

    Draw two 10 cm circles on baking parchment and turn it marked-side down on a sheet pan. Prepare a mug and muffin pan.

    Beat whites to soft peaks, then gradually beat in sugar until dissolved.

    Mix in sifted flour and lukewarm melted butter on low speed until smooth.

    Allow about 15 g batter per cookie for 14 cookies, spreading each very thinly over a 10 cm circle.

    Bake two at a time for 6-8 minutes until the centers look dry and the rims are golden.

    Lift one cookie at a time with a spatula.

    Wearing food-safe heat-resistant gloves, fold it in half and press the edges. Bend the center of the folded edge over a mug rim, bringing the ends downward. Set in a muffin cup to hold its shape. Do not insert paper.

    Repeat in pairs to make about 14 cookies.

    Cool the final pair for at least 10 minutes until fully cold before storing airtight.
