It began as a tea accompaniment for people gathering in Yokogawa, once a rice collection center. Brown sugar is used generously in both the dough and coating, giving a deep molasses flavor. The dipped surface is kept moist rather than dried, so it first has a slight sugary grain and gradually absorbs syrup into the firm interior.
