Louis cake still wobbles in the middle when it leaves the oven, and the top stays soft and sticky long after it cools. A thin yeast-risen base is spread with a batter heavy on butter and sugar before baking.

Instructions

5 steps
  1. 1

Line a 23×33 cm metal pan.

Combine yeast with base milk and water. Separately beat base butter, sugar and salt, then add the base egg.

  2. 2

Alternate base flour and yeast liquid into the butter mixture; beat at medium speed for 4-5 minutes.

Press evenly into the pan, cover and rise about 150 minutes until nearly doubled.

  3. 3

Near the end of rising, preheat to 175°C.

Combine topping syrup, water and vanilla. Separately cream topping butter, sugar and salt, then add the topping egg.

  4. 4

Alternate topping flour and syrup mixture into the creamed ingredients.

Dollop over the risen dough and spread gently without pressing it down.

  5. 5

Bake 30-35 minutes until the edges set and the top is golden; the center will remain soft and trembling.

Cool completely in the pan for about 2 hours, dust with powdered sugar and cut into 16.

Tips

The upper layer stays soft after cooling; do not test the bake by trying to lift a hot slice.
