About this dish
Gelatin holds a whipped sugar foam in place, giving these a soft spring with no egg white involved, which is what separates them from divinity.

Powdered gelatin needs its cold-water rest first, or it forms stubborn lumps when scattered straight into hot syrup.

Instructions
- 1
Lightly oil a 23×33 cm heatproof pan and spatula.
Sprinkle gelatin evenly over 113 ml cold water in the heatproof mixer bowl and bloom 10 minutes.
- 2
Dissolve remaining 113 ml water, sugar, corn syrup and salt over medium heat in a deep saucepan.
Once boiling, stop stirring and heat to 116°C, then remove from heat.
- 3
Hold the saucepan with dry heat-resistant mitts.
With the mixer on low, pour syrup slowly between the bowl wall and whisk, avoiding the moving whisk.
- 4
Increase speed after all syrup is added and whip 5-10 minutes until expanded, very thick and cooled to about 35°C.
Mix in vanilla. Some mixers need longer.
- 5
Spread in the pan with the oiled spatula and dust with half the confectioners sugar.
Set in a cool, dry room for at least 4 hours until firm enough to cut.
- 6
Cut into a 6-by-8 grid of 48 pieces with a lightly oiled knife.
Coat cut surfaces with the remaining sugar, shake off excess and store airtight.
