About this dish

Hoba miso is a mountain dish of Hida and Takayama, Gifu, in which local miso, scallion, and shiitake are cooked directly on a dried brown magnolia leaf over charcoal or a griddle.

It is associated with forestry workers who used the broad leaf as a plate while warming miso in the mountains. Fallen leaves were gathered in autumn and stored for winter, when miso and pickles could be warmed beside the hearth. The savory mixture is eaten hot with rice or sake. Gentle heat is essential: the miso should bubble and the vegetables soften while the leaf perfumes the food without catching fire.

Instructions

Read the steps as a cooking flow: prep, heat, seasoning, doneness control, and finish.

4 steps
  1. 1
    Prep

Wipe 1 food-safe dried magnolia leaf with a damp cloth and rest for 10 minutes to soften.

Slice 80g scallion diagonally to 5mm and stem and shred 80g shiitake to 5mm.

  2. 2
    Control

Preheat a griddle or heavy pan over low heat for 3 minutes and spread the leaf on it.

Smear 100g miso 1cm thick in the center and top with scallion and shiitake.

  3. 3
    Control

Cook over low heat for 10 to 12 minutes, gently stirring only the miso and vegetables every 2 minutes.

Stop when the miso bubbles, shiitake softens, and the scallion loses its raw bite.

  4. 4
    Finish

Support the hot leaf on a heatproof plate and serve at once, taking small spoonfuls with rice or sake.

Do not eat the leaf itself.
