    Preheat the oven to 120°C.

    Remove hard kernels from the popcorn, spread it on a large parchment-lined rimmed sheet and keep warm in the oven.

    Combine the brown sugar, corn syrup, butter and salt in a roomy saucepan.

    Stir over medium heat until boiling throughout, then boil for 5 minutes without stirring.

    Remove from the heat and stir in the baking soda and vanilla.

    As it foams, drizzle it over the warm popcorn and turn with two spatulas. Do not touch the hot syrup.

    Bake for 45 minutes, removing the sheet every 15 minutes to turn the popcorn from bottom to top.

    Spread it evenly before returning it to the oven.

    Spread on fresh parchment and cool completely for about 30 minutes.

    Once the coating is crisp, break apart any clusters and transfer to an airtight container.
