About this dish

Dry red wine, a splash of orange liqueur, orange slices, whole cinnamon, and cloves warm together until the citrus and spice have steeped into the wine.

With no water or juice added, the drink keeps the body of the wine itself. It warms slowly over heat low enough that the surface never comes to a hard boil. Served warm in heatproof cups, it is still an alcoholic drink after heating.

Instructions

5 steps
  1. 1

Wash the orange, slice it thinly and remove the seeds.

Measure out two cinnamon sticks and four whole cloves.

  2. 2

Pour 750 ml red wine and 60 ml orange liqueur into a saucepan.

Add 50 g sugar, the orange slices, cinnamon sticks and cloves.

  3. 3

Warm over medium-low heat for about 5 minutes, stirring to dissolve the sugar.

Once steaming, lower the heat; keep the surface from reaching a rolling boil.

  4. 4

Keep over low heat for 15 minutes to infuse.

If bubbles rise rapidly, move the pan off the heat briefly and reduce the burner setting.

  5. 5

Turn off the heat and strain out the orange and spices.

Divide the wine among four heatproof cups and serve warm.

Tips

Use plain dry red wine, not a ready-mulled bottle. Whole cinnamon and cloves can be strained out cleanly.
This remains an alcoholic drink after heating; do not present it as alcohol-free.
