Instructions

    Finely dice onion, carrot, and ham.

    Melt 1 tbsp butter and saute vegetables and ham.

    Add rice and peas, stir-fry with 2 tbsp ketchup to make ketchup rice.

    Beat 2 eggs with 1 tbsp milk and a pinch of salt.

    Melt butter in another pan, pour egg mixture, and cook until half-set.

    Place ketchup rice on the omelette, fold, and slide onto a plate.

    Top with ketchup and serve. Repeat for the second serving.

Tips

Fold the omelette while still half-set for a creamy texture.
Use demi-glace sauce instead of ketchup for a richer flavor.
Cold leftover rice fries better and clumps less.
