    Peel the bottle gourd and chop it into 1cm pieces.

    Roughly chop the green chilies.

    Heat 10ml oil in a pan, add urad dal, chana dal, and chilies.

    Sauté until the lentils turn brown, then transfer to a plate.

    In the same pan, add the chopped gourd and sauté for 7 minutes until soft and slightly browned, then let it cool.

    In a blender, combine the lentils and fried green chili, gourd, tamarind, salt, and 30ml water.

    Blend into a slightly coarse paste.

    Heat the remaining 10ml oil, add mustard seeds, curry leaves, and asafoetida.

    Once they splutter, pour over the chutney.
