About this dish

Sharp cheddar is worked through the whole dough, which is piped from a cookie press into long savory straws with a faint cayenne heat at the end.

The butter and cheese need to be soft enough to dent with a finger, or the dough will not come through the press. The recipe relies on self-rising flour, with its own salt and leavening, so plain flour is not a straight swap.

Instructions

4 steps
  1. 1

    Preheat to 175°C.

Finely grate cheese and sift flour with salt and cayenne.

  2. 2

Beat butter and cheese together, then add flour gradually on low speed.

Scrape the bowl and mix about 5 minutes until creamy enough to press.

  3. 3

Use a star-tip cookie press to form about 30 sticks, each 7.5 cm long, on two ungreased trays.

Leave at least 1.5 cm between them.

  4. 4

Bake one tray at a time for 10-15 minutes until edges are lightly golden.

Rest on the tray 3 minutes, then cool on a rack at least 20 minutes.

Tips

If stiff dough jams the press, let it soften slightly at room temperature instead of forcing the mechanism.
