Eight grams of black tea steep for four to five minutes in just-boiled water, the leaves are strained out, sugar is dissolved while the tea is warm, and cold water goes in before it chills in the fridge. Boiling the leaves for a darker color only makes it astringent. Loose tea is weighed rather than counted in bags because bags hold different amounts.

Instructions

4 steps
  1. 1

Bring 500 ml water to a boil and remove from heat.

Keep the remaining 500 ml water cold.

  2. 2

Steep the tea in the hot water for 4 to 5 minutes.

Strain out all leaves through a fine sieve into a heatproof jug.

  3. 3

Stir sugar into the warm tea until no grains remain, then mix in the reserved 500 ml cold water.

  4. 4

Let steam subside for about 15 minutes, then cover and refrigerate for at least 1 hour until cold.

Divide the ice among four glasses and pour in the tea.

Tips

Refrigerate leftover tea covered and use within 48 hours. Add ice to the glasses, not the stored jug.
