About this dish

Small whole potatoes come out of a heavily salted bath with a pale, dry salt film on their skins and a fluffy center.

That salt sets the strength of the cooking water; scattering the same amount over boiled potatoes would not give this result.

Instructions

5 steps
  1. 1

Choose potatoes about 3 to 4 cm across and scrub clean.

Do not peel or score them; reserve damaged potatoes for another dish.

  2. 2

Dissolve salt in water in a saucepan about 18 cm wide and add potatoes.

Water should stand about 5 cm above them. If it does not, choose a narrower pan rather than adding unmeasured water.

  3. 3

Bring to a boil uncovered, then maintain a controlled boil for 15 to 20 minutes.

Lift out one large potato and test with a thin skewer; stop when it enters the center easily.

  4. 4

Drain carefully, discard water and do not rinse.

Return potatoes to the warm pot off the heat for 5 minutes until a pale salt film forms.

  5. 5

Melt butter over low heat and serve alongside or spoon over the dried potatoes.

    Do not add more salt.

Tips

Add butter just before eating so it stays fluid. Larger potatoes need longer; avoid repeatedly piercing several potatoes while they cook.
