    Preheat oven to 175°C and line a 9x5-inch loaf pan with parchment.

    Mash 3 ripe bananas, then mix with 115g melted butter, 150g sugar, 2 eggs, and vanilla.

    In another bowl, whisk 220g flour, 1 tsp baking soda, 1/2 tsp salt, and a pinch of cinnamon.

    Add dry ingredients to wet ingredients and fold just until no dry flour remains.

    Fold in 70g walnuts or chocolate chips if desired, then transfer batter to the pan and level the top.

    Bake for 50–60 minutes; when a skewer comes out mostly clean, cool 15 minutes then remove from pan.

Tips
