    Mash the 350 g cooled sweet potato flesh finely.

    Dissolve the fresh yeast and sugar in the lukewarm water, then beat in the sweet potato until no large lumps remain.

    Combine the 500 g flour, salt and sweet potato mixture in a mixer bowl.

    Mix with the paddle for about 8 minutes to form a cohesive dough. Cover and leave to rise for about 3 hours, until visibly expanded and aerated.

    Use the dusting flour sparingly on the worktop and your hands while dividing the dough into eight equal pieces.

    Round them, cover and rest for 30 minutes. Press into discs about 1.5 cm thick, using the remaining dusting flour only where needed to prevent sticking.

    Heat a large griddle or two pans over medium-low heat.

    Cook four discs without crowding, allowing about 10-15 minutes per side. Reduce the heat if the bases darken too quickly and turn as needed to cook the centres. Do not judge doneness by the crust alone.

    Split the first bread horizontally and check that no wet dough remains.

    If necessary, return it to the pan and adjust the heat and time for the others. Cook the remaining four in the same way. Serve warm, split horizontally.
