About this dish

This naan rises on yogurt, baking powder and baking soda, so there is no yeast and no proving time before it goes in the pan.

You do not need an oven: a heavy skillet, properly hot, still blisters the top and leaves brown spots underneath.

Instructions

6 steps
  1. 1

Mix 250 g flour with the baking powder, baking soda, salt, sugar and grated garlic.

Add yogurt, oil and the first 60 ml milk.

  2. 2

Knead gently, adding the remaining milk little by little as needed.

Stop adding milk when the dough dents easily without being very sticky. Cover for 10 minutes.

  3. 3

Chop 5 garlic cloves and prepare the coriander.

Melt 3 tablespoons butter. Divide the dough into six balls and keep them covered.

  4. 4

Use only as much of the 10 g dusting flour as needed.

Stretch each ball into an oval about 20 cm long, divide the garlic and coriander among them and press lightly to attach.

  5. 5

Heat a heavy skillet well and add a naan.

After about 1 minute, check for bubbles and brown spots underneath, then turn with tongs. Cook the second side until spotted and the dough is cooked through.

  6. 6

Cook the remaining breads without pressing them flat.

Divide the melted butter over the cooked naans and serve warm.

Tips

Milk and dusting flour may remain depending on the dough. If few bubbles form, check that the skillet is sufficiently hot before the next naan.
