    Cut onion, carrot, and potato into bite-size pieces, and finely slice the scallion.

    In a pot, stir-fry the beef over medium heat for about 1 minute until the surface changes color.

    Add the vegetables, cook 2 more minutes, then pour in kombu dashi and simmer for 10 minutes.

    Lower the heat, dissolve the curry roux, then season with soy sauce and mirin.

    Warm the udon noodles in boiling water for 2–3 minutes, drain, and place in bowls.

    Ladle the curry broth over the noodles, top with scallion, and serve immediately.

Tips

Add curry roux over low heat to dissolve it smoothly without lumps.
If the broth gets too thick, add dashi in 50 ml increments to adjust consistency.
