Instructions

    Cut chives into 5 cm lengths, rinse in cold water, and drain thoroughly.

    Whisk doenjang, vinegar, plum syrup, and gochugaru until smooth.

    Add sesame oil and sesame seeds to finish the dressing.

    Right before serving, toss chives with dressing for only 20 seconds.

    Plate immediately and serve before excess moisture forms.

Tips

Toss right before serving to avoid wilting.
If the doenjang is salty, add 0.5 tbsp more plum syrup.
