About this dish
Thick slices of hard, unripe green tomato are salted, dried and dipped in buttermilk and flour before frying, and they have to hold together when turned in hot oil.

Firmness matters more than color: softer fruit chosen only because it is green falls apart. The coating happens just before the slices hit the oil, two at a time, before the tomato's moisture can dampen the flour.

Wash and slice the tomatoes about 6 mm thick.
Place in a colander, sprinkle with half the salt and leave for 30 minutes; pat the surfaces dry.

Pour buttermilk into a shallow bowl.
In another bowl, mix flour with the remaining salt and pepper.

Heat the oil to 190°C in a heavy skillet.
Dip tomato slices in buttermilk, coat with flour and shake off loose flour.

Fry 2 slices at a time for 3-5 minutes total, turning once.
Drain when both sides are golden and serve promptly. Check the oil temperature before the next batch.
