Pounding the breasts to about 2cm lets them cook through without scorching. The browned bits left after searing the chicken get loosened with stock and become the base of the sauce. Once the cream is in, a gentle bubble at the edges keeps it from splitting, and the chicken simmers on in it until the thickest part reaches 74°C. The parmesan melts in off the heat, and since tomatoes and cheese both add salt, taste before adding any more.

Divide the chicken into four pieces; pound thick areas to about 2 cm.
Pat dry and season with salt and pepper.

Chop the garlic and tomatoes and tear the basil.
Heat the oil in a large skillet over medium-high heat; sear the chicken in one layer for 4 minutes per side and transfer to a plate.

Lower to medium-low and stir the garlic for 30 seconds.
Add stock and scrape up the brown residue, then add cream, tomatoes and oregano.

Return the chicken and its juices.
Simmer gently for 8 to 10 minutes and check for 74°C (165°F) in the thickest part; continue cooking if needed.

Turn off the heat and melt in the Parmesan gradually.
Add basil and divide chicken and sauce among four plates.
