The broth gets its base from raw pork sausage, skinned and crumbled as it browns, with tomato paste cooked in alongside. The noodles are broken into 3 to 4 cm pieces and boiled in a separate pot, then placed in the bowls before the soup is ladled over. That way they never sit in the pot soaking up broth. The ricotta, mozzarella, and Parmesan mixture warms on top and loosens into the broth as you eat. With salt coming from both sausage and cheese, the soup is seasoned last, a little at a time.

    Remove the sausage casing and chop the onion and garlic.

    Break the lasagna into 3 to 4 cm pieces and put the pasta water on to boil in a separate pot.

    Heat the oil in a large pot over medium heat.

    Break up the sausage as it cooks for 4 minutes; add onion for 5 minutes, then garlic, oregano and pepper for 1 minute.

    Cook the tomato paste in the mixture for 2 minutes.

    Add canned tomatoes, stock and bay leaf; bring to a boil, then simmer over medium-low for 15 minutes. Check that the largest sausage piece reaches at least 71°C (160°F).

    While the soup simmers, boil the pasta according to its package timing.

    Stir to prevent sticking, then drain when the center still has a slight bite.

    Mix the ricotta, mozzarella and Parmesan in a bowl.

    Remove the bay leaf from the soup, tear in the basil and add the measured salt gradually as needed.

    Divide the noodles among four bowls, ladle over the hot soup and add the cheese mixture.

    Let it warm, then stir it into the broth as you eat.
