    Preheat the oven to 175C and line a tray with parchment.

    Combine flour, sugar, baking soda, and salt in a bowl.

    Mix miso, sesame oil, and water in, kneading just until a cohesive dough forms.

    Fold in sesame seeds, then roll dough to 2 mm between two parchment sheets.

    Cut into squares and dock with a fork.

    Bake for 12-14 minutes at 175C, then cool completely to crisp up.

Tips

Thicker than 2 mm will reduce crispness.
Rotate the tray once if edges brown faster than the center.
