Preheat the oven to 175°C and line two baking sheets.
Mix the softened butter, both sugars and peanut butter until even.

Beat in the egg and vanilla.
Combine the flour, baking soda and salt separately, then mix into the wet ingredients until no dry flour remains.

Divide into 24 portions, spacing them about 5 cm apart.
Press twice with a fork in perpendicular directions to make a crosshatch about 1 cm thick.

Bake one sheet at a time for 12-16 minutes, until the edges just begin to brown and the surfaces set.
Bake the second sheet while the first cools.

Rest the cookies on the sheet for 5 minutes, then transfer to a rack to cool.
The yield is 24 cookies, two per serving.
