Right out of the oven they are fragile; a minute or two on the pan firms them enough for a wide spatula, and the thin edges crisp only once fully cool. Shallow layers in an airtight container keep them whole.

Preheat to 175°C and line trays with parchment.
Beat butter, sugar, salt, soda, vanilla and egg until evenly creamy.

Mix in flour just until incorporated, then stir in toasted sesame.

Portion into about 36 tablespoon-sized mounds.
Place no more than 12 on each large tray, about 9 cm center to center, leaving room to spread.

Bake one tray at a time for 8-9 minutes until spread and golden.
Let firm on the tray 1-2 minutes, then move to a rack with a broad spatula.

Cool completely for at least 20 minutes until crisp, then pack in shallow layers in an airtight container.
