Ginger beer or regular beer will not taste the same as root beer, and the bottle should be labelled nonalcoholic. Without ice, nothing waters the drink down. A spoon and a straw let you eat the cream and sip the soda separately.

    Chill two mugs of at least 600 ml in the freezer for 10 minutes.

    Open the cold soda without shaking it.

    Slowly pour 250 ml root beer down the side of each mug and briefly let the first foam settle.

    Lower 60 g ice cream into each mug from just above the surface.

    Let the foam rise without adding more liquid, and serve immediately with a spoon and straw.
