Semla is a Swedish cardamom bun filled with almond paste and whipped cream, finished with powdered sugar.

Instructions

    Mix flour, yeast, sugar, cardamom, and milk, then knead in butter.

    Proof once, divide into 4 balls, and proof again.

    Bake at 180C for 15-18 minutes and cool.

    Cut tops off, scoop some crumb, mix with almond paste, and refill.

    Pipe whipped cream and replace the top lid.

Tips

Fill with cream only after buns are fully cool.
Add 0.5 tsp more cardamom for stronger aroma.
