Instructions

    Cut tofu into 2 cm cubes, blanch in lightly salted boiling water for 1 minute, then drain.

    Heat oil in a pan and stir-fry minced garlic and the white part of green onion over medium-low heat for 1 minute.

    Add ground pork and break it up while cooking; once browned, add doubanjiang and chili flakes and fry for 30 seconds.

    Add soy sauce, sugar, and water; bring to a simmer, then add tofu and cook on low for 3 minutes.

    Stir in starch slurry gradually to thicken, then simmer 1 more minute so the sauce coats the tofu.

    Turn off the heat, fold in the green part of the onion, and serve hot with rice.

Tips

Blanching tofu first helps it hold shape and removes raw beany notes.
Briefly frying doubanjiang in oil unlocks deeper aroma and color.
