Cut tofu into 2 cm cubes, blanch in lightly salted boiling water for 1 minute, then drain.

Heat oil in a pan and stir-fry minced garlic and the white part of green onion over medium-low heat for 1 minute.

Add ground pork and break it up while cooking; once browned, add doubanjiang and chili flakes and fry for 30 seconds.

Add soy sauce, sugar, and water; bring to a simmer, then add tofu and cook on low for 3 minutes.
