Instructions

    Trim tough fibers from greens and cut into 4 cm pieces.

    Massage greens with 1 tbsp doenjang, half the garlic, and perilla oil.

    Boil rice-rinse water and dissolve remaining doenjang.

    Add seasoned greens and simmer over medium heat for 25 minutes.

    Adjust seasoning with soup soy sauce and add remaining garlic.

    Add green onion and chili, then simmer 2 more minutes.

Tips

Pre-seasoning greens removes grassy notes and deepens flavor.
