    Roughly chop the spinach and finely dice the onion.

    Heat 1 tbsp olive oil in a pan, sauté onion, then add spinach and cook off moisture.

    In a bowl, combine cooled spinach, feta, eggs, and dill for the filling.

    Layer 4 sheets of phyllo in a baking pan, brushing each lightly with melted butter.

    Spread filling, top with 4 more phyllo sheets, and fold edges to seal.

    Score the top and bake at 190C for 35–40 minutes until golden.

Tips

Cook out spinach moisture well to prevent a soggy pie.
