The cheese here is a mix of mozzarella, ricotta, and feta in place of Georgian Imeruli and sulguni. To eat it, tear off pieces of the crust and swirl them through the cheese and egg.

Warm the milk with the dough butter, sugar, coriander and dough salt just until the butter melts.
Cool to 38-43°C, then mix in the yeast and dough flour to make a rough dough. Cover and rest for 10 minutes.

Knead by hand for 8-10 minutes until smooth.
Place in a bowl, cover and let rise for about 1-1½ hours, until well expanded.

Mix the mozzarella, ricotta, feta, filling egg, 14 g flour, filling salt, pepper, parsley and chives.
Refrigerate until needed. Beat the wash egg with the teaspoon of water separately.

Divide into four roughly 150 g pieces, flatten lightly into ovals, cover and rest for 15 minutes.
Stretch each into an oval about 25 cm long. Roll the long sides inward to make rims and twist and pinch the ends firmly into a boat shape.

Place two boats on each of two parchment-lined trays and divide the filling among them.
Cover and rest for 20 minutes while heating the oven to 190°C. Brush the rims lightly with egg wash and bake for 15-20 minutes, until lightly golden and the cheese has melted.

Remove the trays and press a hollow into each cheese filling with a spoon.
Add one cold pasteurized egg to each and divide the finishing butter among them. Bake another 8-10 minutes to set the whites. For firmer eggs, allow about 12-15 minutes, checking their texture.

Check that the egg whites are set and transfer the breads to plates while hot.
Discard leftover raw egg wash. Tear small pieces from the rim and use them to stir and scoop the cheese and egg.
