    Remove the heads and innards from the dried sardines and soak them in the water for 20 minutes.

    Bring to a boil over medium heat, cook 5 minutes more, then remove the fish to leave a clear broth.

    Shred the daikon and carrot into thin 4 cm strips.

    Slice the green onion thinly on the diagonal and cut the leafy greens, stems and leaves together, into manageable lengths.

    Add the daikon and carrot to the sardine broth and simmer over medium heat for 5 minutes.

    Add the green onion and leafy greens, season with soy sauce and salt, and return to a boil.

    Reduce to medium-low heat and sprinkle in the buckwheat flour in three additions.

    Stir firmly from the bottom with a wooden spatula so the flour absorbs the broth and gathers into small masses.

    Divide the buckwheat masses into bite-size dumplings with the spatula and cook over low heat for 4 to 5 minutes.

    When no dry flour shows in the center and the surfaces are firm, serve with the broth.

Tips

Adding all the flour at once creates large lumps that stay dry inside. Sprinkle it across the broth in stages and stir from the bottom after each addition.
If leftover somage becomes firm after cooling, cut it into small pieces and toast on an ungreased pan or grill until both sides develop browned surfaces.
