    Prepare a 20 cm square pan.

    Stir the cornstarch into 1 cup of the measured water until no lumps remain.

    Bring the coconut milk, sugar and remaining half cup of water to a boil, stirring.

    Remix the settled slurry and pour it in slowly while whisking continuously.

    Lower to medium-low heat and stir across the base and corners.

    When the whole mixture is very thick and slow bubbles break in the center, cook while stirring for about 1 more minute, then pour into the pan.

    Smooth the surface and let the strongest steam subside for about 30 minutes.

    Cover and refrigerate for at least 3 hours, until cold and firm throughout. Wipe the knife between cuts and divide into 16 squares.
