    Stir the honey and chili flakes in a small saucepan over low heat for about 3 minutes.

    Remove from the heat as soon as tiny bubbles appear around the edge.

    Leave off the heat for 10 minutes.

    Transfer a little to a clean spoon and let it cool before checking the heat level.

    Stir 5 ml apple cider vinegar into the warm honey, keeping the chili flakes, then transfer to a clean heatproof container.

    For a smooth sauce or to limit further infusion, pour it through a fine sieve as you transfer it.
