About this dish

Thick toast carries sliced roast turkey under a cheese-enriched cream sauce, the whole dish warmed through in the oven and then browned under the broiler, then eaten with a fork straight from the baking dish.

Only a small pinch of salt goes into the sauce itself because pecorino brings much of it. The bacon goes on after the oven, where it stays crisp instead of softening under sauce. A dish rated for broiler heat is needed, as ordinary glass can crack.

    Preheat the oven to 190°C.

    Cook the bacon in a skillet over medium heat for 6 to 8 minutes until crisp, then drain. Toast the bread and halve the tomatoes.

    Cook butter and flour over medium-low heat for 2 minutes.

    Gradually whisk in milk and cream and cook, stirring, for 4 to 5 minutes until thickened. Remove from heat and mix in 35 g cheese, nutmeg, salt and pepper.

    Place two toast slices in each of two broiler-safe dishes.

    Divide the turkey over them, set tomatoes at the edges, and cover with warm sauce. Sprinkle with the remaining 10 g cheese.

    Bake at 190°C for 12 to 18 minutes, until the turkey at the center reaches 74°C.

    Then grill or broil for 1 to 3 minutes, watching closely, to brown the sauce.

    Top each hot dish with two bacon slices and serve immediately.
