Warm milk to about 35°C.
Mix flour, sugar, yeast and 0.5 tsp salt with milk, egg and 25 g softened butter. Knead 10 minutes until smooth.

Place in an oiled bowl, cover and let rise in a warm place for 60 to 90 minutes until doubled.

While dough rises, finely chop cabbage and onion.
Brown beef for 7 to 8 minutes, breaking it up. Add vegetables, remaining 0.5 tsp salt and pepper; cook 12 to 15 minutes more until beef reaches at least 71°C and no liquid pools.

Spread filling on a shallow plate to cool for 20 minutes.
Divide dough into 8, roll to 14 cm circles and divide filling equally among their centers. Gather and pinch seams tightly.

Set seam-side down on a lined tray, cover and rest 30 minutes until puffy.
Preheat oven to 190°C.

Bake 25 to 30 minutes until browned and filling reaches 74°C.
Brush with the remaining 10 g butter, melted, and rest on a rack for 10 minutes.
