Buy raw corned beef meant for cooking, not canned meat or deli slices. Because curing keeps the meat pink even when done, color tells you nothing, and reaching the safe temperature does not mean the connective tissue has softened. The brisket is ready when a fork slides in easily. No salt or stock goes into the pot, because the beef seasons its own water, and brands differ enough that the broth needs tasting before it reaches the table.

    Discard packaging and brine.

    Put beef in a snug large pot, cover with the measured water and add garlic, bay and peppercorns. Check any additional cooking directions on the package.

    Bring to a simmer, skim foam and cover.

    Simmer gently for 3 to 3½ hours until fork-tender. The center must reach at least 63°C; continue cooking beyond that point if still tough.

    While beef cooks, cut potatoes and turnips into roughly 4 cm pieces and carrots into thick chunks.

    Cut cabbage into 6 wedges with a little core attached.

    Once beef is tender, add potatoes, carrots and turnips and simmer 15 minutes.

    Add cabbage and simmer 15 minutes more, until a skewer passes easily through vegetables.

    Lift out beef and rest 10 minutes before slicing across the grain.

    Serve with drained vegetables and discard bay. Divide leftovers into shallow containers and refrigerate within 2 hours of finishing cooking.
