Pimentos are sweet, mild jarred red peppers, and the same amount of chili flakes or fresh bell pepper does not stand in for them. Cheddar grated from a block keeps its shreds instead of mashing into paste.

Drain the pimentos, weigh 80 g, blot gently with paper towel and finely chop.

Finely grate the cheddar into a bowl.
In a separate small bowl, mix the mayonnaise, hot sauce and cayenne evenly.

Fold the pimentos and mayonnaise mixture through the cheese.
Stop when all the shreds are coated and the spread holds together. Serve immediately or transfer to a covered container and refrigerate.
