A large scallop shell serves as a tiny pan for broth made with grilled dried fish and bonito flakes, red miso and ita-fu simmer in it, and beaten egg softly binds the mixture. In the formal ingredient list, the defining scallop element is the shell used as cookware rather than scallop meat or assorted seafood. A small cast-iron skillet reproduces the heat and texture when an old, cooking-safe natural shell is unavailable. Stir until the edges are set and the moist center is fully hot, then spoon it over rice.

Remove heads and guts from two grilled dried sardines and split them.
Soak with 180ml water in a small pan for 10 minutes, then simmer gently for 5 minutes.
