The can holds the orange-fleshed kind packed in syrup, often labeled yams in American stores, and its 40 oz figure includes the syrup. Draining that syrup lets the butter and sugar mix into the potatoes instead of floating in liquid. The marshmallows go on only for the last few minutes, because they color far faster than the base heats through.

Instructions

5 steps
  1. 1

Heat the oven to 350°F (177°C).

Spread 1 teaspoon oil thinly inside a 9-by-13-inch baking dish and melt 113 g butter.

  2. 2

Drain and discard the syrup from the 40 oz can.

Put the sweet potatoes in a large bowl and mash until mostly smooth.

  3. 3

Mix in the melted butter, 1/2 cup packed brown sugar, 1 teaspoon cinnamon and 1/2 teaspoon salt.

Spread the mixture evenly in the prepared dish.

  4. 4

Bake uncovered for about 30 minutes, until the center is heated through.

Keep the marshmallows off the dish during this first bake.

  5. 5

Scatter 1 cup mini marshmallows across the surface.

Bake at the same temperature for another 5-8 minutes, watching for a pale golden topping, then serve warm.

Tips

Use a US cup of about 240 ml. The 40 oz label includes the syrup; do not add more drained potatoes to bring the flesh alone up to 40 oz.
These timings start with cooked canned sweet potatoes. Raw roots, unsweetened puree and syrup-packed pieces differ in moisture and sweetness and are not interchangeable in the same quantity.
