Melt the butter in a heavy saucepan.
Soften the onion and celery over medium-low heat for about 8 minutes. Stir in the flour and cook for 1 minute.

Whisk in the stock gradually and bring to a boil.
Remove from the heat and let cool for about 10 minutes. Blend the vegetables with an immersion blender, keeping its head submerged to limit splashing.

Whisk in the peanut butter in portions, then the cream.
Add lemon juice, hot sauce and brown sugar. Add some of the salt first and taste before using the rest.

Return to low heat and stir until steaming, without a rolling boil.
Divide among bowls and scatter the chopped roasted peanuts over the surface.
