Eggplant, cucumber, myoga, ginger, shiso, long onion, and optional green chili are finely chopped, briefly soaked only where bitterness is a concern, drained well, and served immediately with bonito flakes and dashi soy sauce. The fireless preparation suited hot, humid farm seasons when appetite was low and time was short. It is spooned over rice, cold tofu, somen, or soba, and can also be eaten with sake.

Wash and dry all vegetables.
Dice eggplant and cucumber into 3 to 5 mm pieces and mince myoga, ginger, shiso, onion, and chili more finely. Remove chili seeds for less heat.

Other vegetables need not be soaked. Drain everything thoroughly in a fine sieve and blot lightly so no water droplets remain.
