The eggplant goes into the oiled pan first and cooks until the surface is coated and the flesh begins to soften. The octopus is added only for a brief stir-fry so its firm texture remains. Miso, mirin, and sugar are mixed beforehand, then folded quickly through the hot ingredients with optional sliced chili. The dish is finished as soon as the thick seasoning coats the eggplant and octopus evenly. Despite the word for pork in its name, the dish arose when octopus from Amakusa Bay replaced pork, which was once scarce in the region. It is served with rice, with shochu, or cooled in a lunch box.
