Wash the spinach, remove tough stems and roughly chop the leaves.
Mince the onion and cut the cream cheese into small pieces.

Heat the oil in a wide skillet.
Turn the spinach over medium heat for 3-4 minutes until fully wilted. Drain in a strainer, cool briefly, then press firmly with a spoon to remove excess liquid.

Wipe any water from the skillet.
Add the butter and onion and cook over medium-low heat for about 4 minutes until tender.

Lower the heat and stir in the cream cheese.
Add the cream, garlic powder, salt and pepper; stir for 1-2 minutes until smooth.

Fold in the drained spinach, loosening any clumps, and heat for 1-2 minutes.
Serve when the sauce coats the leaves without releasing a watery puddle.
