Small holes are pierced through each pouch so shiitake soaking liquid, soy sauce, sugar, sake, kombu, and dried sardine stock can move inward as the rice expands. It looks like an oversized inari sushi, but the rice is not cooked beforehand; it absorbs the broth and becomes tender inside the plump tofu pouch.

Soak the dried shiitake in the water until soft through the center.
Squeeze and remove the mushrooms, then strain and reserve all 800 ml of the soaking liquid.

Shave the burdock thinly and rinse it, julienne the carrot, and finely chop the shiitake.
