About this dish
Corn tortillas cut into small pieces take the place of rice or noodles, softening in layers between shredded chicken and a thick tomato-cream sauce.

The sauce starts with condensed mushroom soup used undiluted. Ready-to-eat soup in its place leaves the filling runny. Most of the heat comes from the salsa, so a mild or medium jar sets the tone before any chili seasoning. A short rest after baking lets the sauce settle into the tortillas and makes the squares easier to lift.

Instructions
- 1
Preheat the oven to 175°C and oil a 20 cm square baking dish.
Shred the cooked chicken into short pieces and dice the tomatoes.

Combine condensed soup, salsa, sour cream and chili seasoning.
Fold in chicken and tomatoes until coated.
- 3
Cut tortillas into 3 cm pieces and spread half over the base.
Cover with half the chicken mixture, repeat both layers, then scatter cheese evenly on top.
- 4
Bake uncovered for 40 to 45 minutes.
Check that the center bubbles as well as the edges and reaches at least 74°C. Cover loosely with foil if the top browns early.
- 5
Rest for 5 minutes, then scatter sliced scallions over the top and serve.
