Cover refrigerated dough and rest at room temperature 30 minutes.
Preheat to 205°C and line a sheet pan with parchment. Blot the ham and shred or thinly slice the cheese.

Dust lightly with flour and roll to 25×40 cm.
Spread melted butter mixed with minced garlic and parsley. Layer ham and cheese, leaving 7 cm bare along one long edge and 2.5 cm at the other edges.

Beat egg with water and brush the bare edges.
Roll from the opposite long side into a 40 cm log, tucking in the ends and pinching the seam closed.

Transfer seam-side down and brush lightly with egg wash.
Cut four 3 cm vents on top and bake 25-30 minutes until golden and at least 93°C at the center. Discard unused egg wash.

Rest on the pan 5 minutes, then transfer to a board and cut into 8 slices.
